I have a question about packing a bag , I've seen in some videos that they put a hole in the top of the bag (top where the seal is) I was wondering for what it is?

correct. if the opening extends out of the chamber the air from the outside atmosphere will start to fill the bag as it vacuums.

I believe that is done if the open end of the bag won't fit inside the chamber-- if the bag is too long, for example. That way the air can escape during the vacuum process.
