Shrimp Burger Question

Looking for suggestions. I am making a Shrimp Burger. Any ideas on something that will bind it a bit more than just a shrimp puree? I do not want to use egg. The mass is 1/2 pulsed shrimp and 1/2 dicedd shrimp.

Looking for a "glue" that will hold it together and allow it to be grilled as well.

Meat Glue! Transglutaminase RM.

I'd add it to the pulsed shrimp, then mix in the diced and form patties. Chill to give it a chance to set before grilling.

What Brian said. Here's my experience making shrimp burgers with Activa RM. I coarsely ground 75% of the shrimp using a Kitchenaid meat grinder attachment. The remaining shrimp I chopped into larger chunks so that there would be some texture in the patty. I mixed in 1% Activa RM along with some black pepper. The proteins in shrimp like to bind together anyway and are pretty sticky already. I sprinkled the Activa over the shrimp and folded it in several times... if you dump the Activa in all at once, it's hard to incorporate it evenly throughout the shrimp. I then transfered to greased ring molds on a silpat and move it to the fridge to set overnight. Here they are after I unmolded them.

Then I bagged them in Ziplocks with butter and cooked them sous vide. I can't remember the time/temp combo, I used but I think I cooked the core to the suggested temp from MC.

To finish I seared them off hard on the grill and served them on toasted, buttered buns with Old Bay aioli. Also some heirloom tomatoes and instant pickles (not pictured, because they cover up them pretty grill marks).

The flavors were nice, but I WANT TO CAUTION YOU ABOUT MAKING LARGE PATTIES. You don't want a shrimp burger that's the same size as your standard beef burger. It's just too much. Like way too much. We ended up cutting the patties in half to make them less thick and the result was much more pleasant. While I really enjoy the shrimp burger concept, I think it probably works best as an interesting slider rather than as a large-format burger.

That's where Wylie's shrimp 'noodles' come into play.

I like shrimp as much as the next guy, but a full size burger patty is too much of a good thing.
