Just wondering why anyone would use this sort of thing. As far as I can tell, it lowers the temperature that you are applying to the product (the metal body absorbs significant heat), which slows down the process of searing (and uses more energy). The point of sous vide + sear is that the sear is fast and does not cook the product. Searing with a torch takes care, obviously, but I don't see how this sort of thing is any kind of advantage. Curious what the community thinks
