My perfect cup.. Beans are stored in a vacuum sealed container, ground per usage (22g of coffee/285g water@205deg F), dripped via a Hario V60 pourover (45 sec pre-infusion, 2:30 extraction time), into a pre-warmed mug. Cheers!

If you like the Virtuoso you may want to upgrade to the Vario-W. Instead of being set on a timer, it operates on weight. This thing rocks! One could easily make the argument that you could dose the coffee out on a stand alone scale and add the amount to the grinder and save yourself a few hundred dollars. Also, keeping the beans in a vacuum sealed environment on the side doesn't hurt either. That said, you can get super super dialed in on grind size with this guy and it has some nice memory functions as well. Thoughts??

Another cheap way to get amazing coffee is with an
Aeropress
. It was my go to method for a morning brew before my fiance got me an expresso machine.

– It's not that a hand grinder is better than a power grinder. It's just that you can get a good hand-cranked burr grinder for well under $100. The same is not true for powered grinders. If you want powered, I highly recommend this grinder:

for those of you interested in the Hario mill, Sur La Table stores (at least the one I work at) carry it. I took the PT job to satisfy my cooking gear addiction; I don't take home much money, but I do have cool tools! Anyone know of a good 12-step program for knife or cookbook addicts?

I haven't heard good things but I've never really used them either. Coffee people are a fickle bunch so you never know if something is expensive because of the name or because it's truly better.

A good quality powered burr grinder is very expensive and this is pretty useful for other things other than coffee too.

Sure:
(1) Coarse, freshly ground coffee. We are enjoying
Herkimer
coffee at the moment.
(2) Measure your ingredients! I like 70 g of coffee to 1000 g of water. Most French press pots don't hold quite this much, for example, I can usually only get 700 g of water in mine, so I'll use 49 g of coffee to 700 g of water.
(3) Add the coffee to your French press pot, pour over just boiled water—if you want to get really nerdy you can obsess about the temperature of the water.
(4) Give the coffee a stir and then wait for 4 minutes.
(5) The secret step—that I learned from
Tim Wendelboe
—is to skim the raft of grounds off the top before plunging the press after 4 minutes of steeping time.
(6) Enjoy within 15 minutes. Nothing is worse, in my opinion, than stale coffee.
Note, if your coffee is a bit sour, you will want to grind it finer and if it's a bit bitter you want to grind it more coarsely. Keep the steeping time and the brewing ratio constant.
