sous vide setup

ok, so i finally got an anova circulator (yay for the sale!) in place of the crock pot-controller setup ive been using til now.

my biggest pot is still kinda small to use with it, tho, but i have some 4.5 gallon buckets that i get from work that i could use for it. seems like it would be perfect - except its deep, the bottom of the circulator would still be a fair distance above the bottom of the bucket, so im worried about the bottom getting to and maintaining temp, since heat rises. i was thinking though that maybe i could just remove the bottom clear cap that directs the water to the side. this should then leave the water directed down, right? since its nothing more than a directional cover (that i can tell) its ok to use it with that off, right?

thoughts? other ideas?

cant wait to start using it. #gotplans...

don't worry, just pre-heat the water (use hot tap water), itll be fine

Yeah I don't see a problem personally, If you're really worried just get a separate thermometer to check it.

The Anova circulator is a little metal fan that rotates horizontally. I suspect that it may reduce the effectiveness of the circulation to remove the cover. I don't think it will be a problem, but if you are worried, you can always pick up a $5 aquarium pump and put it in. Sous Vide Supreme does not have a circulator at all and relies upon convection. I don't think you need to be concerned, it should be fine.

relying on convection is good if your heat source is on the bottom, my worry here was that since the heat source was more in the middle the bottom would be cooler. doesnt seem to be a problem, though. ive got a brisket going and dropped my probe in under it and so far its keeping temp down there. now the big question is which is giving the right temp? the anova says 137, but the probe and my two dial thermoms are reading 135. admittedly, i never calibrated the probe and dials tho.
