Here is my first pass at dry aging a NY strip at home. I built a small Arduino based controller to measure the humidity inside the fridge and control a small humidifier to maintain a relative humidity of 55-60%. I plan on testing it out at as it ages to see how the flavor profile changes. The strip is grass fed prime @ $7.50/lb.
