Candied Edible Flowers

I have a giant borrage flower plant. I can't keep up with the delicious little blue flowers and was hoping I could preserve them by candying them. Does anyone have a method that keeps the color?

I candy flowers and use an egg white and sugar. Room temp egg white whipped until frothy. make sure your flowers are completely dry and clean. If you can cut the stem in order to leave an inch or two just so you can hold the flower while you apply the egg wash with a paint brush. Otherwise use tweezers. I also put my sugar in the food processor to make it a bit finer grain. Brush the flower completely coating it in a thin film of egg wash then sprinkle the sugar, starting with the back side then move to front side. Lay on drying rack until completely dry and store in an airtight container in a cabinet. They will last a few months if done correctly. They taste great as well. Kinda like cotton candy. I’m pretty sure Massimo Bottura has a way of doing this for his dish ‘Think Green’ - when I get home I’ll check the book and post it if I remember.
