Doughnuts To Order ??

Hi

I am currently researching a way to produce doughnuts to order without the need for proofing before frying. I'm getting pretty good results with a brioche dough but wondered if anyone had any better ideas/recipes ?

I do know that there are croissant products out there that can go from freezer to oven without the need for proofing. I believe they use a modified yeast that can withstand a higher temperature and thus allow it to proof longer in the oven during baking.
