@Brendan — Agree that Restaurant DOM is a must visit and I can confirm that Alex Atala is a great guy. Last time I saw him (Flemish Primitives conference a few years back) he gave me these dehydrated ants that were huge, crispy, and had the flavor of lemongrass.

I really want to go to DOM. I find the mystery that is Brazil fascinating. And Atala seems like a cool cat.

I dined at Attica in Melbourne a few years ago. Last year ranked 63, this year 21. It will be even harder to get into now.

It's surprising to me how far down the list some restaurants fall in relatively quick order.

The one restaurant on my bucket list (Arzak) has been in the top ten since 2006. To me, that's massively impressive.
