Seeking Modernist Cookbook Help
I am seeking help in choosing a cookbook to give to a young cook that highlights modernist cooking techniques, that will inspire them to push their cooking boundaries. Ideally the book will contain food porn images, amazing recipes, but also contain something that a starving student can try to replicate. Price point ~USD50 (sorry MC and MC@H your are too expensive for this).
I am thinking of Eleven Madison Park: The Cookbook, but I hear the recipes are volumetric not weight based - not ideal for a modernist book.
Anyone have other ideas?
Cookbooks that I am reading at the moment, that I am also thinking of include:
Au Pied de Conchon, Martin Picard (not very modernist but great book)
Mourad - New Moroccan, Mourad Lahlou (very good)
Degustation, Alain Fabregues (very expensive here in the US, but great small plate classic French inspired dishes)
Quay, Peter Gilmore (wonderful book, but the ingredients are not that easy to find)
Marque, Mark Best (not the easiest recipes to follow, but one of the top 3 cook books I own)
Joe Beef, Frédéric Morin, David McMillan and Meredith Erickson (it must be that I was born north of the 49th parallel, but I enjoy cookbooks from crazy Montrealers)
