Hello all/
I'm doing a bagel pop-up in about a month in SF (Yes, I read the nyt article. Yes, I was already planning on doing this.) and I was looking into doing the smoked salmon myself. I don't own a smoker, and the only friend I know that has one says that his won't get cold enough, which I'm inclined to agree with.
Does anyone know a way to smoke the fish without a smoker or with a smoking gun, that I'd be able to do or am I best off just buying a smoker that will do it/paying someone else to do it/buying the fish somewhere?
