When is it best to use the convection part of your oven as opposed to the regular oven?

I almost never use my ovens without the convection running. The idea is that the moving air keeps the heat more even. On my "big ass oven" (two 25 lb turkeys and all the sides) the only time I don't turn on the convection fan is when I'm broiling something HOWEVER I am NOT a baker so I don't know how they feel

I am with Rob- convection is always running when I'm using the oven. The model I have has two ovens, I wish I would of paid closer attention and purchased a model which offered convection in the bottom as well as the top oven.

the cooking time with convection is usually a little shorter. PLEASE, use a thermometer until you really master the recipe, I always see the guys saying "i know by feel" well IMHO a thermometer is for the serious cook who wants it perfect. I had a guy tell me thermometers are for wimps and amateurs, two days later I took him down in a competition in the Caymans , I USED a thermometer ...;)
