Shelf life of a peanut butter candy
marsha_210571
Hi!
I'm trying to determine (without waiting 6 months!) if a candy recipe of peanut butter and simple syrup- then dipped into chocolate will last 6 months. Any suggestions? Ideas?
thanks!

How do you plan to store it? My first concern would be oxidation and rancidity in the peanut butter so anything you can do to prevent oxygen should help. 6 months is a long time without specialized packaging or freezing. Textural changes could also occur in the PB and simple blend as you are blending a high oil content product(PB) with simple that may crystallize and/or separate over time. I think you'd want to get a good stable emulsion. Maybe some lecithin would help, or do some research on other stabilizers. I'd also consider glucose syrup or invert rather than simple. I'm just throwing some thoughts out. Not sure exactly what you are doing, but I'm assuming something like a Reese's cup. I think this may be difficult to hold for 6 months, but if you can get a stable PB filling and store in a jar that's been vacuum packed or gas flushed you might have a start on it.
