Yep, I spent 5 years working with Heston. He's a wonderful guy, and it was a blast contributing to The Fat Duck. Nice to see someone from Darrington on ChefSteps too, a few of us actually spend time up in Darrington flying gliders out of the airfield. So, small world.

Now, with regards to storing dry ice, there are really only two things that are practical: (1) Use a good cooler and (2) increasing how much dry ice you're storing. A relatively small amount, say, less than 5 lbs will evaporate pretty quickly, but double that amount and it's going to last much longer.

I'm curious, where do you buy dry ice in Darrington? I'm guessing you would have to drive in to Arlington to get it?

I Found that out right away .... I am taking care of a couple of boy's 10 an 12 I am thinking they would love to make this ice cream .... I am so glad that i stumbled on the CS site and , and y'all are in Seattle ... thanks Judy

I live in Darrington wa ( close to the Oso mud slide) it's 50 miles to get the dry ice . I had to get it in the afternoon and made my ice cream the next morn'n ,,, .The good news i was amazed witth the bread cones ,... who knew ... Thanks for the heads up ,I will try next time to get the DI the day of ... I just ordered a Avona Sous Vied heater ... Excited to start a new adventure ....

Here's my advice on storage of dry ice. Don't plan to store it. Buy it the day you plan to use it, as close to the time you plan to use it as possible. That said, you can hold for a while when needed. As @Todd_Shewman_38102 says, store in a styrofoam cooler for short periods. Do not put it in any type of cooler or other storage that can be locked close. Buy blocks rather than pellets if you have the choice. Buy a couple pounds more than you plan to use. Store somewhere with adequate ventilation.

Judy (May I call you that?) - Several of the authors you see on chefsteps recipes worked with Heston, I'm not sure we can even if it'd be really cool, can share anecdotes on that level, as for storage - most suppliers will give you those rules.

Just a cs forum.member here. Chris young (one of the cs founders) was the leader for hb's experimental kitchen as I understand it and you can see him on many of the "in search of perfection" episodes. Highly recommend them. As for storing dry ice, it does sublimate fairly quicky so in a cooler with thick styrofoam walls is the only guidance I have received. I can rarely get more than 30 hrs out of it and lose most if it by then.
