After watching and reading CS for two weeks straight . I notice that you use electric burners and stoves .. any particular Reason . and could you give me the name of the stand alone burner you use .. 

where do you get your xanthan gum , and critic acid and other interesting array of things you add to food .. Thanks ...   Judy

Hi Judith,

The burners are induction and generally will heat faster and hotter than electric or gas burners.

Xanthan gum can be found in many grocery stores. Look in the all natural or gluten free area. I see it under the Bob's Red Mill brand. Citric acid can also be found at many grocery stores in the canning area. I think Ball has a citric acid they sell in a little green and white plastic bottle. Otherwise, modernist pantry will sell those and many other ingredients on their site. If there's something I can't get locally, they are usually my go to.
