Hi, I'm David, and I'm about to make one of Ferran Adria's dishes, a granadilla soufflé, with a methycellulose foam coating. In the recipe, he advises to use the Albert y Ferran Adria Texturas Metil, but as I've found, It's really expensive, and there are many other companies, that sell methylcellulose, for culinary use, on a lower price. My problem though, is that I have no idea, what kind of methylcellulose it is, that Metil actually contains, and I got among the different types. My question is, that which methylcellulose on the market has the same properties, as Ferran's one, which is the best substitute for Metil? Do you have any experience with this stuff?
