Just gonna leave this here...
In the unlikely event that someone needs a +1 for Alinea, please let me know. I've tried multiple times as a solo diner and they basically told me I could pay for a two top and dine alone (yikes). My availability is pretty good, but would probably need at least a few days advance notice.

I have drooled over that dish for years...
I frequently try and reproduce it with sous vide burgers and Crazy on you....
-- Kidding aside, just reading how it came about has som many culinary aspects that it is mind blowing.

- It's really an awesome dish, and so immersive in the sensory experience. Served on a glass plate over a bed of sand. Beautiful plating. If you can't walk your diners down to the seashore, bring the ocean to them. I'd love to experience it beyond just the book.

— The dish is called "Sound of the Sea" and yes, it's served with a conch shell that has headphones. One of my favorite dishes to have been involved with.

- I think sound as part of the dining experience was pioneered at Fat Duck. Forget the dish but they had earphones emanating from a shell with sounds of the ocean. Or so I hear. Or rather I don't. Sadly, I've never been. Nor Alinea. Which is downright unexcuseable.

I really need to make it there one day. Been to Alinea and it's truly awesome. For me it's on another level of dinning out. THat's what Grant Achatz is going for anyway - saw an interview with him recently where he talks about experiments using music and sounds to alter your perception of flavor. It's as much about the modernist techniques and such as it is about the experience/atmosphere. Anyway - so I really need to get to Next sometime soon. Sorry I missed the El Bulli menu.
