Tips on Freezing Tomatoes

Any good tips for freezing and vacuum sealing tomatoes? Wondering if it makes sense to roast them down in the oven or freeze them whole and cored. Any help would be appreciated very much...thanks!

Running into this problem myself, so am freezing them according to the frecipes I will use them for. That said, most are blanched, cored and peeled with the juice put into the bag with them (pulp in a seive over a bowl, dust pulp with salt and pour what collects in the bottom of the bowl into the bag with the to,atoes). The other I like is to do a tomato confit (dried in the oven for about 4 hours) and frozen in the vacuum bags. Either way, if you know some recipes you might use them for, you can prepare them now which will reduce prep time when it comes time to do the recipe. Food for thought.

Thanks for the help, Todd! I'm most curious about the confit version. I think this may conserve space and also might be how I could better use them for sauces. Any additional thoughts?
