" was a recent discussion with Daniel Vaughn on the local NPR station.
I like some of his writings and comments, but I lost all respect for him when he slams the use of liquid smoke in recipes, particularity sous vide meat, and then states he has NEVER tried sous vide meat with liquid smoke.

Thats like our friend that claimed she didn't like lamb and would never try it ever! So I cut the loin out of a baby rack, SV to rare/medium rare, seared it and we all told it was a veal tenderloin. Her comments; "that is absolutely amazing flavor" after being told it was lamb "WHAT THE F&*%, I HAVE WASTED 30 YEARS OF MY DINING EXPERIENCE ". Maybe Daniel should be subject to my house rules, If you are invited to dinner you HAVE to taste everything (unless you are allergic). If you don't like it you absolutely, positively, have the right to spit in into your napkin and no one will even blink. (and you get extra wine for just trying!)
