Here we go... this Baby will be delivered in about 2-3 days:

As soon as it is here i shall order a whole Beef-Back from am organic farmer up in the Swiss alps and let it hang for at least 6 weeks (http://niggli-angus.ch/ )

I am not only planning to dry Age meat in it but also extend my charcutterie products and use it for drying Birds (for example Peking Duck and Chicken adapted to Mr. Blumenthal's recipe)

Now why couldn't THIS be on kickstarter! For me, this is one of the most interesting products I've seen in a while. Marc, I look forward to seeing more pictures of it as you fill it. I guess the limitation would be one kind of meat/product at a time??

Landig is a Family owned company and has been producing Game-Coolers for quite some time. The sous-viders amongst you might know them for their LaVa product line. According to them the limitation is 3 full beef backs up to about 100 kg. Quite impossible for a private house hold to get to those Limits.

I don't see a reason why i could not have my ham, salami and bacon curing next to a dry aging piece of Beef. I'll keep the temperature around 1° celcius and the humidity at about 85%. Both can be controlled exactly with the dry ager.

@Rob: I was looking at the steaklocker too but it now costs about 1'400 without shipment. The shipment to Switzerland would be about 500 bucks.. (USD and CHF are more and less the same at the Moment). Considering the aditional tax and Import costs I would end up at around 2'200 - 2'300 Swiss Francs. Ok, that's almost 1'000 bucks cheaper:

But there is more to it than just Money. The extra 1000 give me:

- A. A product from an experienced company vs. an unknown start up

- B. A company offering a support if something goes wrong vs. no Support

- C. A much bigger cooler that actually allows me to put in much more

If you guys have time and a tiny bit of programming knowledge, its not hard to make your own curing chamber with a frost free fridge, humidifier, and an arduino!

programming knowledge? I'm still woring on what to do with all my leftovers. :-) Like turning the caramelized banana juice into Bonbons (hopefully this evening) . LOL! I'm not PC illiterate, but have no programming experience.
