Here we go... this Baby will be delivered in about 2-3 days:
As soon as it is here i shall order a whole Beef-Back from am organic farmer up in the Swiss alps and let it hang for at least 6 weeks (

I am not only planning to dry Age meat in it but also extend my charcutterie products and use it for drying Birds (for example Peking Duck and Chicken adapted to Mr. Blumenthal's recipe)
