Can you vacuum pack fresh Udon noodles bought from a local store?

You can, but they'll get smashed when the bag collapses. The best way to do this would be to use a higher end chamber vacuum that has a gas flush option, suck out all the air, and then add some nitrogen back to the bag so that it's looser. This would keep the noodles from oxidizing and also keep them from getting crushed.
