I've noticed in several photos from Modernist Cuisine that they're able to monitor the temperature inside a sous vide bag using what looks like a piece of foam and a probe thermometer (see photo below).
I'm curious if anyone has any idea how to do this, what products they're using, etc. I've seen
seal tape but am not certain it will work. Any help would be greatly appreciated. Thank you!
