Hey all,
So I actually work in a NYC kitchen, but as a pizzaiolo. The nature of my job doesn't really permit me to work on my knife skills, so I was wondering if anyone had any suggestions to:
1) Learn knife skills in a crash-course sort of way. IE, I'm not going to culinary school, but is there a short class or series of classes where I can go in the area (or online) to learn knife skills in the way they would use them at a competent restaurant (IE, Gramercy Tavern, Untitled, Craft, etc.)
2) Best way to practice once I learn? I want to be proficient and fast (basically, become competent the same way I am working in a wood fired oven.)
Any help on a game plan would be sincerely appreciated.
