Playing with my new chamber vacuum sealer, I put a bowlful of broccoli puree from the blender to the chamber vac to de-gas it. While it might work better with a smaller amount of puree, this particular puree - soup consistency and thickened a bit with xanthan - had a curious effect: the bubbles of air expanded, but never popped. So I had to stop and release the vacuum before getting puree all over my sealer. This happened both in a sealing bag and an open wide-mouth bowl.
A smaller amount would have surely worked better - I was working with a pint of. broccoli puree in a two-quart bowl.
So heads up.
