Bread baking question

If I use a sourdough starter, but don't have time to feed it everyday, has anyone had experience with retarding it? If so what time limits work.
Also, any small outlet owners, what is the best commercial bread oven for very small bread production?

I keep mine in the fridge and feed it every 7-10 days. Been fine in there for almost 2 years.

Yep just keep it in the fridge. Feed around once a week.
