As mentioned in my last What's For Dinner post, I have a lot of wild Alaskan halibut that my friend gave me after a recent fishing trip. The things were deep frozen on the boat, so they could be used as blunt force weapons at this stage. What is the best method of defrosting the fish? I put the vac sealed fish in slightly above room temp bath to thaw, but the texture of the flesh was a little unappealing. Was that an artifact of being frozen (which I know will cause tissue damage if it isn't frozen quickly)? Or was it more my method of thawing?
The only reason I went the water bath way was because I forgot to take the fish out of the freezer Saturday night, so I needed a quick-ish way of thawing.
