Half-Candied Blood Orange
Hadley_191877
Hey guys, I was just wondering about the half-candied blood orange. Is there anyway I can make it without a vacuum chamber? I don't have one but I still have sous vide. I would love to make this but I just don't have a vaccum chamber. Thanks.

First question is do you have a vacuum sealer? Not a vacuum chamber, but one like a food saver or something. You'll need a vacuum sealer. Food saver (sorry, that's the one i have experience with) makes canisters fire use with a channel vacuum sealer, used with the accessory tube.

The chamber it's there to degas the syrup and oranges. You won't have the power of a chamber vacuum sealer, so you'll probably want to do the vacuuming more than10 Times. The vacuuming will also help draw the syrup into the oranges. Check out the linker the canisters i left there, and see if that would be doable. I really think, though, that you Will need a vacuum sealer of some kind though. Good luck
