One Container, Two Immersion Circulators?
Tim_Sutherland_52834
Has anyone used two immersion circulators in one container? If so were there any issues?
I need to SV some brisket and I can either use two 12"x18"x9" cambros (20 litres of water) with a circulator each and SV a total of 4 chunks of meat or use one 18"x26"x9" cambro filled 6" deep (46 litres of water) with two circulators (one rated 20 litres max the other 30 litres max) in the same cambro (opposite ends) and SV a total of 6 chunks of meat.
I assume the maximum water rating for the Polyscience immersion circulators is there as this is the maximum amount of water the pump and heating element can maintain at the set level. More water than this and the entire bath would not be at the same temp (within tolerance) and the heating element would either burn out from over use, or at least shorten its lifespan to an unacceptable time frame. With a larger water bath and two circulators, at opposite ends, and the total water amount less that the maximum rated amount for the circulators combined, I believe there should be no issue in getting the water to temp and maintaining it for a 72hr cook time.
Does anyone see any flaws in my thinking?

The 20lb+ of smoked brisket is in the big bath for the next 70 and a bit hours.

Thank you I'll put the beast together in an hour or two once the brisket has finished smoking.

@Tim
— I have done this many times for large BBQs (did it this weekend actually). I've had up to 4 units on separate circuits. Works fine.

There was a discussion about this on Reddit. It will obviously help with rebound and coming up to temp more quickly and I think it will increase your capacity but I am weary that it will double it but the folks who chimed in on reddit seem to think it will. Let us know how it goes.

Polyscience sells that as a kit in the latest catalogue, with an oversize cambro.
