Been seeing the plate for a while now in the into for sous vide beyond the basics. Just been wondering what it was because there doesn't seem to be a recipe for it even though it looks beautiful.

I always thought it was a piece of sous vide salmon w. cucumber, grape fruit and diakon and a avocado puree thickened with some xanthan gum.

Yeah- it is tuna. Not sure why I type salmon...

I think it might be shaved fennel rather than diakon.
