Does anyone know how to make a green apple fluid gel? Or have a recipe for one?

then just sub the orange for apples. you might want to use malic instead of citric acid. CS seems to use that when the do things with apple. good luck

I would agree with Brian. Malic acd is the predominant acid in apples. One note, because you would be using water to hydrate the gellan (and dry ingredients), this would obviously dilute the flavor. You might consider adding some freeze dried apple to make up for it.

How about using apple juice to rehydrate it?

You "could" but it's unlikely you'll get the same flavor because heating destroys the flavor (at least as I understand it).

True, but it would be a little easier. And Apple juice does taste decent

honestly perfect puree and 1% agar with would be a simple starting point
