looks good for oven cooking and having a tough time wrapping my head around other uses. It would be good to get rid of the long wires, but beyond that.....? Currently I don't have more than a couple different temps for proteins (and even that is rare). Still getting rid of wires is a good thing (IMHO).

Thermocouples are great if you double bag, smoke, grill, despite having all of that, I very seldom use it, the modernist workhorses I really use are, circulator, pressure cooker, calibrated thermometer, Isi, dehydrator and infra red thermometer (it is awesome for frying and cleaning and storage and whatnot else)

Isn't thermocouple more handy for frying than infra red? What do you mean that infra is awsome for cleaning and storage?
In the list of workhorses you mentioned calibrated thermometr. What type? And what usecases?

The infra red is awesome for frying, just point it at the oil
, a calibrated one is great as a reference and the infrared say when you clean the fridge shows you hotspots, in a pantry you can check the temp and so on
