Honestly, I would have taken a picture of it, it wasn't terrible looking like the last batch I did, but regretfully, my camera is sitting on my desk at work. If the leftovers make it through the day, I'll upload them tomorrow.
Just to see what would happen, I did a quick salt cure on a couple beef short ribs it had to pull out some of the moisture. I let the salt/sugar on the ribs for about 20 minutes, then rinsed them in ice water. After drying, I painted on 3% by weight 3 crab brand fish sauce, and vacuum sealed it for 3 days in the fridge. After those three days was up, I pulled them out of the vacuum bag and set them on a wire rack in the fridge for another three days. Yesterday, I pulled them out, put a healthy pat of butter on each, vacuum sealed them, and put them in a water bath 155°F. After 24 hours, I pulled them out of the bath, dried them off, and put them in the freezer for 1/2 hour. I heated up some oil to 400°F and put them in for a couple minutes to get a crust on the outside.
They turned out pretty god damn good. A little on the salty side, but not overly so. Next time, i'm not going to use a salt quick cure, but these are definitely good eating. I'm going to repeat the procedure (minus the salt cure) on some boneless pork ribs I have in the freezer soon.
