So i have and idea for a new starter in my resturant. I want to cut cut bone marrow bones horesontoli and smoke it. Then i want to take out the marrow clean the bones and use them as a plate for the starter.
The starter looks as following, Steak tartar,smoked bonemarrow mousse, chives, parsly, pickled red onion, lemon vinegrette. And maby something deepfried for texture.
But what i need is a good recipe for the bone marrow mousse. Never done it jsut know that the dish would be amazing whit it.
