Probe with heat resistant cable?
Theo_129732
Can anyone recommend a probe that can be draped over the side of a hot pot without melting so I don't have to do this balancing act?

try threading it through a binder clip?

The best cables I have seen are only rated up to ~480°F/250°C.
Don't use anything plastic to hold the cable as it will melt.
Best bet on gas is to use a candy thermometer that stays in and over the pot to be protected from the flames/heat coming up the side.
Induction makes life easier.

The one CS uses seem to hang over the sides with no problem at all, no idea what the brand is tho..

Spend the extra and get the thermoworks brand. I had the same probe your using and it melted on me as well.

Me too. With that said, I have a Thermoworks high temp wire probe which has the fiberglass insulation peeling back because I placed it inside of liquids. I shouldn't mimic chef steps videos when Thermoworks advises against this :-(

Get a pot clip from thermoworks for a few bucks if you don't want to buy a new thermometer or make your own from a bulldog clip ;-)

I got the pot clip, and I hate it. Its so awkward to use that I have retired it. A paperclip or book binder is a better solution.
