Air fryer to finish food
Martin_212020
Has anyone tried finishing food cooked sous vide in an air fryer? I don't really want a traditional fryer because of the smell, tbh, but am curious how an air fryer would perform. I don't own one, so can't test it out myself. Thanks.

Air fryers are lies. Air doesn't transfer heat to food nearly as well as oil does, so even if you set your air fryer to 400F, it'll take forever to brown compared to 400F oil. By the time you develop a crust, you'll have overcooked the interior. Just fry in a pot of oil. Or if you hate oil for some reason, use a torch, Searzall, or broiler. But nothing's going to give you the "crispy all over golden brownness" of actual frying.

Well you're supposed to coat whatever food you're "frying" in oil before adding it to the air fryer, which is supposedly what makes it effective. But yeah, they're not really very effective. Just do it in a pan if you don't want to deep fry it. It won't be as perfect, but quite frankly, who cares? If I have a juicy fat NY Strip, and the sides aren't perfectly caramelized along with the top and bottom, I'll find a way to console myself. Probably with a juicy fat NY Strip.

I own one, more of a novelty than a utility, but it does have its uses. Next time i sous vide a throw away piece of meat, I'll put one in it to see what happens, and I'll get back to you.

I did have the opportunity to try this last night. While the air fryer does build a crust on the food faster than a traditional oven, it tends to bake the food. I used a hamburger patty, and it took about 15 minutes to get the crust, and that was only one side. I didn't bother with the second side as it was already overcooked. Air fryers are interesting, and the can mimic the fried food texture with some things, but not all. It's more like a very aggressive convection oven than a traditional fryer. I hope you find this useful.

Thanks for the update - it's nice to know for sure, rather than just guessing as I was before!

I wasn't particularly optimistic, just curious. I've had a proper fryer before, but tbh heating up a load of oil for a one of thing, and also having to deal with the smell of that, was less than ideal. I currently use a MAPP blowtorch, but wondered if one of these would work as an alternative sometimes.

That's a bummer. My wife got one for Christmas from a neighbor and I got really excited to finish some steaks. Dasher of dreams, you are! I do love air frying some halved Brussels though...no complaints. Hah

I realise this is an old thread - had an opportunity to use an air fryer yesterday on my sous vide steak last night. 3mins 300F came out perfect with a nice crust without overcooking. another piece I did at 5mins was a little overdone making my medium rare steak medium but still tender and juicy. Would probably try higher temp at 3mins the next time around. (a guy on reddit suggested 400F at 3mins)

I did with my
air fryer
last week and it's kinda easy. I'm very thankful to technology that make things easily. Just pretty bad on making the crust nice.

I have a take away restaurant that we cook all the proteins with sous vide, before we was sealing with normal pans before we serve, we try with the arifry and the results was awesome, before star selling we give samples to people and ask if they like same more or less than the food they eat normally, all of them says the same or more tasty, this si the future of non human cooking, sous vide and airfry at least for some foods

Dude, I just bought a air fryer recently and it’s just amazing cooking. I always heard that this is a cool and comfortable thing, and finally I decided to try to buy it. I looked at the reviews at

and chose one awesome model for 250 bucks and it just can not be described in words. She cooks everything very quickly and also tasty. The only negative is that I gained a few extra pounds because of too tasty food.
