Pecan butter without conche

Does anyone have a recipe for really smooth pecan butter that I can make without purchasing a conche? I want to make a pecan and banana spread but can't seem to find any recipes that result in really smooth nut butter like the CS team made.

Ive done pecan butter in my vitamix and it turned out quite well. I was able to use it in making a maple pecan gelato. You will need allot however. Too few and the blender will only spin. You could also try adding a touch of pecan oil as you blend. I roasted mind and blended them while still warm.

I was just thinking about this last night while paging through Ad Hoc at Home. There are some
nut butter recipes
in there which simmer the nuts in milk/cream, drain and then puree (in a vita-prep of course). Was thinking about trying the pistachio or marcona almond butter recipe in there sometime soon.

Todd, dumb question that I've been wondering for a while: Do you use the standard (aka "wet") blade/container or the special "dry" blade/container for this type of thing? I ask as I don't want to f-up my $500 blender....

I only have the standard, so that's what I use/abuse. :-) It has stood up well, but I don't take it easy on it either. The waring is in my sights. ;-)

Try a food processor & sieve if you have them. I usually process warm nuts for ~ 10 minutes for a puree then pass them through a
#50
sieve. I don't like to add any additional oil but the texture would likely smooth out even more w/ the added oil.

I made the pistachio butter out of the Ad Hoc book tonight. Worked really well.Maybe not as pretty green and pistachio-y as the CS conche version, but quite tasty nonetheless.
I didn't pass it through a strainer; I don't think it needed it.
Plus, a byproduct of the recipe is pistachio infused "half and half"...
Edited to add: I think it would've been much greener had I skinned the pistachios (oops). Was still delicious on brioche with cherry preserves with my coffee this morning..
