Has anyone ever tried to carbonate candy like gummy bears or starburst in a whipping siphon? Will that even work? I don't even have one, but it's on my wishlist and the question just popped up in my head!

You can have carbonated candy, Pop Rocks for instance. The problem with making this is, when it's made, the molten sugar and flavoring is subjected to hundreds of psi of CO2. It is kept under this tremendous pressure until it has fully cooled. From there it is processed into tiny pieces and packaged. The difference between that, and the gummy candies you're suggesting is the texture. A gummy candy will lose the carbonation a lot fast than a hard crack texture candy. If you have a separate container to nest inside a whipping siphon, you could try that, and then just cut it into smaller shapes. What would probably be easier, though, would be to use citric acid powder and baking soda. These two dry powders won't react until moisture is added. Not quite as fizzy as commercially produced fizzy candy, but you still get the effect.

Yup I saw a guy on YT that recreated the pop rocka process from the actual patent info but he made a custom pressurized chamber with a stirrer to slowly cool down the mix, really hardcore DIY. How long do you think gummy candies would last carbonated in a siphon?

I have no clue. I've never tried to carbonate a soft candy (or really any candy). I wouldn't think very long, but give it a try. What you're really going to need to figure it is how are you going to keep it liquid while the CO2 dissolves into the candy, and then you need to get it out of the siphon once it's solidified.

Yea I was thinking of getting some sort of disposable plastic tube which can be cut to release the candy tube after it's set. And use carageenans to set the candy so it has a small time frame of a few minutes for the CO2 to dissolve into the candy before it sets. Not sure how carageenans would work out for a fruit candy but it's a starting point!

I've only done carbonated jello cubes with grape juice. It worked. The "fizz" disappeared quickly but they were also in the siphon/fridge for a shorter amount of time than preferred. Made the gel using agar, cut into small cubes and put them in the siphon with a small amount of grape juice.

I think...they had a how to make carbonated cranberry jello video on here for a little bit. But not that it really helps. You should do it!
