New toys -Cleavers

I just picked these up on my last trip to Hong Kong. Chan Chi Kee Cutlery, LLC (CCK) I was watching an episode of Anthony Bourdain and he had gotten some there. Because my Cantonese is poor at best, I ended up going to the factory a few blocks away first and watched them making all kinds of cleavers and knives. I ended up purchasing the stainless clad upon their recommendation. I love the smaller one for slicing vegies..they call it a duck slicer.

The big cleaver is a joy to use once you get used to it, actually after using it for several years it took me some time to re-learn how to use a western shaped chef knife. And don't get confused, the big cleaver is a real chef's knife, not a meat cleaver to split chickens or to cut thru bones, is a thin edge that works beautifully on the chopping block, it also used to slightly pound ingredients, and once you're finished cutting, it works like a huge spatula taking all the chopped goods from the cutting surface to the pot.

Get a big cutting block to get the real feeling of it

and sharpen that edge to razor blade level.
