Doughnuts as flat as pancakes

Please help me I made the yeast doughnuts. The first time they came out beautiful and risen . But after that they haven't worked for me . After I shape them I put them in a warm oven to prove them but as soon as I take them out of the oven and go to pick them up they go as flat as pancakes . The rise isn't as good as it was the first time either . Please help me . I love baking and since they haven't been working it is really bringing me down .

Hi Lydia, We need more information. Do they raise on the first rise? How warm is the oven your are proofing them in on the second rise? I am guessing temperature too warm, you only want it just warm and then turned off. Is it warm enough they are cooking killing the yeast or are they over raised? What type of yeast are you using? Is the yeast good? Have you proofed it to check? Try raising covered with plastic wrap on the counter not in the oven and use some new yeast. Just some thoughts without all the details.

If your liquid ingredients get over 110°F it will kill your yeast. I use instant yeast (SAF instant yeast) and mix it in with the flour as it doesn't need to be hydrated with the liquid, my preference.
