Impressive, Easy Desserts

Looking for impressive desserts with an easy pickup. Was considering a posset, milk-ices or a riff on italian ices, etc. Any suggestions? Want them to be fun, interesting...just pull from cooler, freezer, cut, and possibly finish at the pass.
