As promised, a video of sonication.

This is about a tablespoon of sesame oil in a pint of plain, tap water.

This shows just how quickly supercavitation can create an emulsion.

Next time? I'm trying to decide between a chili mayo or marinading a fillet.

But wouldn't that create a pretty unstable emulsion? I assume that the way this works is that the force generated by supercavitation is able to quickly break up all the fat molecules so that it emulsifies, but if that's true, it would return to its unemulsified state relatively quickly, as there's nothing keeping the fat particles in suspension.

Granted, if you're also using an emulsifying agent, that's not an issue, but then the only added value of sonication is speed, which isn't really much of an issue for anything I need to emulsify.

The emulsions I've made thus far have seemed pretty stable; the oil-water milk lasted about two-three weeks.

As far as the process goes, the horn creates a zone of supercavitation where the oil is ruptured into water at a microscopic, if not (according to my rough research) a nanoscopic, level. The same imploding bubbles (from supercavitation) create currents inside the water that flow more oil to the homogenizer head. This high level of disruption and extremely through mixing probably produces "clumps" of oil-water molecules that allow it to stay together.

Also keep in mind, I'm not a scientist who works in this field, I'm just reading and trying to understand.

2-3 weeks? Wow, that's pretty incredible. I don't think it's clumps though. It's probably just that supercavitation chops all that fat into such tiny particles that it takes a long time for them to reform.

Aren't these things super expensive? I just spent a few minutes googling and saw $5000 price tags.

I paid far less as our lab dept was liquidating. Even came with a new head, still sealed with manual and all that.

1) Make a gravy or sauce with meat shreds and broth (a meat emulsion). 2) Can it make a roux of flour and oil without cooking and then I wonder what the thickening strength is? Just a couple of ideas I had.

Can you try making ice cream without any stabilizers?
