The perfect Mary Pickford.

My name is Hans, I am the Audio Director here at ChefSteps. I am also a long time bartender, and creator of the Churchill's Breakfast. I completely agree Mary deserves a modern revisit to her cocktail. I was very impressed by her resume (co-founding United Artists with Mr. Chaplin was quite impressive indeed) Give me a few days and I try and work something out.

I met her once, she came outside her gated home in Hollywood with a small group of people, and yes, she sounded Canadian. She didn't use the name Mary Pickford, though.

I wouldn't personally mess about too much with a cocktail like this. You could perhaps infuse the pineapple into the rum using a siphon and omit the juice to make a slightly stronger version though.

I also occasionally like to brush the glass with a small amount of essential oil which helps the aroma and just gives a little something else to the drink. You can probably buy pineapple essential oil from modernist pantry.

Hmm, maybe if you want to really change things up you could experiment with coconut somewhere in the mix, maybe leave out the cherry juice, add a small amount of coconut water, and then rim the glass with some desiccated coconut. At that point though you're not really making a Mary Pickford.

@pgcath, Update: Experimented with the recipe yesterday, and will again today. Had some crazy ideas I had to try out, why not with this insanely cool kitchen! We will see how it turns out, I will have the info for you when I am all finished.

@pgcath Here you go! If you would like to do a version of this at home, I would recommend just making the scratch grenadine, combine the ingredients, and shake. This was really fun and turned out awesome!

Very cool! How is the drinkability with the sphere in there? is it kind of like a carbomb where you have to take that down first and then enjoy the rest of the drink or does it stay submerged well for a nice treat at the end.

It really does stay submerged until the cocktail is finished. That's why I chose to use a much better quality rum, and orange bitters to taper off the sharpness of the booze. You could also substitute the sphere "caviar" method if you wanted to incorporate the grenadine more in the drink. I just tend to enjoy the taste of Zacapa on it's own!

I plan to include this as one of 8 cocktails I'm doing this weekend. Churchill's breakfast may also be making an appearance. Ambitious? Yes. But now I'm committed.

@Chris - Will do. I'm excited about this. I've haven't done much with cocktails before, but been inspired by several of the recipes you guys have put up and some recent experimentation with infusions. Each of the drinks I have planned focuses on a different base spirit, and a different technique that I've been wanting to try, or in a couple of cases have tried previously and failed learned what didn't work.

@pgcath It's a pretty intense recipe, so I totally understand, haha. I would say the scratch grenadine is the most important part, as well as the fresh pineapple juice and good rum. Grenadine gets a bad wrap because of inferior products that use its name. Scratch grenadine is AMAZING stuff, lots of versatility, and multiple layers of flavor.

@Hans - I just made the scratch grenadine. Not being able to wait until tomorrow, I tried some and it truly is amazing. I noticed step 5 of the recipe calls for 367 g pomegranite juice, but I think maybe it should only be 267 g. Trying to decide if I go large reverse spheres or small direct spheres. I'm leaning toward the later at the moment. Pineapple juice is clarifying. Banana Juice is in the circulator (for a different cocktail). Getting ready to do some enzymatic supremes.
