Hey all. I have a Polyscience Professional Circulator, Creative Series (
http://www.testek.ca/en/cooking-equipment/sous-vide-cooking/nouveau-circulateur-thermique-sous-vide-professionaltm-serie-creative-de-polyscience.htm ) and have been wanting to try a 72hr short rib recipe. The only caveat is that at the bottom of that description in bold it states this particular model is intended for light to medium usage and I was a little nervous about burning out the motor. It's not like I use the circulator on a daily basis for hours on end and the longest I've ever continuously had it on is 6hrs. I just wanted to get some trusted opinions before I go ahead and do it. Thanks!
