A word of advice to anyone making it: don't stir that roux like a madman!
My left thumb now looks like Two-Face from a lava-hot pork fat roux splatter, as soon as it hits your skin it becomes solid again, ouch! xD
Nothing major though and it's all worth it when it hits the dinner table in a few hours! I'll update pics in a bit!
