Robert_Conn_II_123023
I have seen a foaming soap dispenser used with soy lecithin to make a foam but I cant find a recipe. Anyone tried it? Any links or tips?

Here you go.
Edit: This uses versawhip instead of lecithin.
Edit2: In the comments,
@John
Fisher mentions that he's had "good luck using liquid soy lecithin at 0.6 up to 1%, it may not be quite as stable but it works."

It works great, I've tried it with foams using liquid soy lecithin and Xanthan gum, I think the lecithin works best. Here is a mustard foam that I liked: 200 grams water, 75 grams yellow mustard, 1.6 grams soy lecithin.
It's in Grant's recipe for oysters with a mignonette foam:

I have granulated soy lecithin on hand, and of coarse I have xanthan (I wouldn't be caught dead without it). Ill play with it and see what I get. Thanks again.
