cooking thermometers

I've checked with the folks at Thermoworks in finding a wire probe to use in making candy, etc. I was told they don't have one that is food grade. However I saw a couple ChefSteps videos where they are using a wire probe (chocolate Turkish Delights is one of them). I've checked around on the www and haven't been able to find this phantom wire probe. Any ideas?

This is called called a thermocouple, so do your web search for thermocouple not thermometer. You will need a meter and the thermocouple probe. This probe says it is good for candy: SMOKE HOUSE PENETRATION PROBE - STAINLESS OVERBRAID Model: 113-177. This and the meter are available at Thermoworks, but there are others as well. Hope this helps.

John, thank you so much for your input. Unfortunately it's not exactly what I'm looking for. What I'm in search of isn't a probe with a stainless braided wire. I've got that setup already. I'm looking for an flexible WIRE probe that is food grade and immersible, not a rigid metal probe. The wire portion, not a metal probe, is inserted into the bubbling cauldron of sugar/candy. Sorry if my question was a bit confusing!

Byrdie, the wire thermocouple is not rated for food grade because it is not designed to be used with liquid. They won't warranty it if used in liquid, it doesn't mean it won't work. I know of many chefs who still use them. They do have multiple, one for each type of item, i.e., chocolate, sugar, sauces. They the boil the wire (not the connector) after each use. The issue is that the liquid can get in between the wire and the sheath making for difficult cleaning. IMHO that is what CS used. @Grant_Lee_Crilly_63791 could you confirm?

I think I understand what you're saying....the probe AND the wire get dropped into the liquid. That would never have occurred to me. This is the probe I've been eyeballing. No probe, just wire. Do you think this might work as well? Heavy Duty Wire Probes Model: 113-372/373/375
