Hi all, I finally was able to get my account able to post on the forums. I must have never activated the link in my email.
Anyways, glad to be a part of the site. I love reading the topics here and some of your guys' plates look amazing. I am definitely a noob compared to most of you, but I love cooking and love learning the science behind it.
Right now I am using a cooler method for sous vide with water displacement to seal the bags. Have only used it a couple times, but have had great success and the temperature usually only drops a couple degrees over 45 mins to an hour.
I will be doing a couple ribeyes this afternoon that I salted yesterday and let sit overnight in the fridge uncovered. Just now threw them in the freezer and will be searing them with a torch for my first time. Then cooking sous vide for about an hour to medium rare then finish quickly with a sear on the stove.

, welcome to a great community! Your process on the rib-eyes sounds good. Depending on the thickness of the steaks, you might need some more time in the bath, especially if starting from frozen. If the steaks are an inch thick, figure on about an hour; plus an additional 30 - 45 mins from frozen. I'd allow for 2 hours for 1" thick steaks; after all, you won't be overcooking anything!
