There are several companies that sell Tupperware-like containers with one-way vacuum valves on the lid. I recently saw a video where Wylie Dufresne filled one such container with a foie gras mousse dispensed from a whipping siphon and then placed it inside a chamber vacuum to aerate it. I've also seen the same technique used elsewhere to aerate chocolate.
Does anyone have experience using these containers inside a chamber vac? Most are designed for use with a hand pump or with a hose and an accessory port on a vacuum sealer. Do they work just as well if you put them directly a chamber vac? Any brand/model suggestions would be welcome.
