What are the limits of Joule?

Have to admit that the Joule has got me excited for a more compact circulator. I use the Polyscience creative, but not sure if the Joule is comparable and perhaps not an "upgrade". I know the lab uses some Polyscience circulators and I wonder if the Joule is up to the job for projects like leg of lamb or making smokey briskets?

I have the PS as well and the Joule is obviously much smaller and technically just as powerful as the PS creative series making it more than possible to do dishes like leg of lamb etc and it has some advantages in that it can be used in a much smaller vessel etc etc.

Yes you can easily use Joule to make Leg of Lamb.

Thanks! since you have the creative, have you considered purchasing the PS chef vs the Joule? I know Joule is revolutionary in the way it heats, is compact, and has a lower price point; but what else? Any thoughts would be really helpful, Todd.

I have one step down (the creative series) and have been very happy with it. Tbe chef series is designed more for ....well chefs and restaurant use (though I use mine probably much more than most homes). So when I started out I considered the chef series and opted for the creative series and would do so again if it weren't for Joule. For the home cook especially (I still think it has the potential for professional kitchens) the Joule is my current recommendation for those who ask. If they absolutely cannot wait and have the space (the creative series has a large footprint) then the ps would be my next choice for the home cook. Jmho.
