Braisy vs steaky

will joule have options for both? Say I want my short ribs at a high temp to get that brainy quality and another day I want to do 140 for a longer period to get steaky quality. Will techniques for both be on the app?

I recall when I briefly tested it I could set the time and temp according to my preferences. They are striving to have setups for the beginner (who is not as familiar with time and temps) to the more experienced user.

these characteristics have more to do with what you include in the bag and the temp/time rather than the device. Any sous vide system will do these things, so perhaps your question concerns automated features? If so, please clarify.

It is my understanding that each time you cook you will have the option of selecting your desired out come. There will be visual references and you just select the reference that best suits your desired outcome for that specific cooking situation. You will have control on your desired out come for each use.
I had to laugh at the auto text correction on your post, "brainy quality". Yes that is what Joule is supposed to bring to the masses, the brainy quality to get their desired results without having go to reference material to get the proper times and temperatures.

You should be able to choose the texture you want to achieve based on what they call 'visual doneness'. Basically a short video clip of the meat being cut to show color and texture achieved. It is pretty slick. The app will suggest time and temp for you to achieve it. So for short ribs, you could choose between low temp, long time to get a steaky texture, or high temp, short time to get a braise like texture, or several points in between.
